This helps the fat render out more effectively, and makes it more crispy.<\/li>\n<li style=\"margin-bottom: 15px;\"><strong style=\"color: #006633;\">Room Temperature is Key:<\/strong> Because this is a large cut, let it sit out for 60 minutes before cooking. A cold centre will result in an uneven roast that is overcooked on the outside and raw in the middle.<\/li>\n<li style=\"margin-bottom: 15px;\"><strong style=\"color: #006633;\">A Good Rest:<\/strong> After roasting, wrap loosely in foil and rest for at least 20 minutes.
