Here is how we prepare our roasts:
- Score the Fat: Before roasting, lightly score the fat cap with a knife. This helps the fat render out more effectively, and makes it more crispy.
- Room Temperature is Key: Because this is a large cut, let it sit out for 60 minutes before cooking. A cold centre will result in an uneven roast that is overcooked on the outside and raw in the middle.
- A Good Rest: After roasting, wrap loosely in foil and rest for at least 20 minutes. This ensures the juices settle so the meat stays moist when carved.
- Sauce Pairing: The roast is perfectly complemented by the heat of our Signature Black Pepper Sauce or a classic Brown Sauce
Product Notes:
Vacuum-packed to retain freshness. The colour of the meat darkens naturally in the pack and will brighten up after opening.
